Do I need a different GA code for staging compared to Prod? If I put the GA code into staging and then it gets pushed to Prod, then all the activity on Staging would show up in my GA, correct? How is this normally managed within a Managed Wordpress site with staging?

I would tell you this is true for any place where you copy from production to staging - what I would do is just disable the analytics code on the staging site and just re-add it when you move back to production - the other thing you might be able to do is filter it on the Google side to not include the temp domain.
