I have hosting plans with other providers too but dont know why GoDaddy makes it difficult to change nameservers while other hosting providers does not even require us to provide IP.

The only reason you should have to enter IP addresses for your name servers is if you are trying to have NS1.YOURDOMAIN.COM and NS2.YOURDOMAIN.COM
In this case it is not GoDaddy requiring this but the internet in general as those need to be registered with the "root" name servers so that other web services know where to find your DNS - other wise it should just be a matter of putting in the domains for the name servers from your other providers
