My wordpress ecommerce (woocommerce) site has become really laggy over time. I would like to start all over again with a new theme, remove all customizations and etc just to do a quick fix without hurting myself trying to investigate stuff (and I'm not very techy so I wouldn't even know where to begin!).
Does anyone know how to re-install wordpress but still keep certain woocommerce records (sales, transactions, products)? Save for these records I'd really like to just start all over again. Don't need the photos, themes, etc. Is that even an option?

There are a few plugins that can help you export your data from Woocommerce, and others that can help you import data, maybe you could try that.
Of course I suggest that you first make a full backup of your site and preferably test the plugins on a different installation of Wordpress (maybe one made in a sub-domain).
For export you can try to use this: https://wordpress.org/plugins/woocommerce-exporter/
For import you can try this: https://wordpress.org/plugins/woocommerce-xml-csv-product-import/
There are many free plugins that do that and of course there are many premium plugins with that functions, you just have to take the time to search which is better suited for your needs.
Here's what I suggest to clients building out E-Commerce sites.
If the site has a content component + store component, split both these, like...
https://site.com -> content
https://store.site.com -> E-Commerce system
This way you can experiment with either main site changes or store changes, independent of each other.
You can also split an existing site by exporting pages/posts/navigation then import the .xml export file into a new main site.
Then delete pages/posts/navigation from your old site + rename it to store.
Difficult to say what might be best without a site link to understand the organization of your site.
